Chicken Clear Soup

Hello my foodie friends......hope y'all are doing good. I know these days writing a blog post is on the side track because some other things have taken the priority. 

Anyway how's the weather treating you these days? Here, in Boston we are still dealing with freezing cold, chilling winds and snow. Keeping the cold aside, who doesn't love snow when you're sitting at home with your cuppa, munching over your favorite cookie and gazing the view from your apartment window. 



One more thing that is synonym to winters are Soups. We both are soup lovers whether it's Tom Yum Soup, Hot n Sour Soup,Tomato Soup, SweetCorn Soup or Chicken Soup. We love them all. Today, I thought of sharing a very simple recipe of Chicken Clear Soup right from scratch. It is simple to make and at the same time very healthy and refreshing.


This soup needs very few ingredients which are easy on stomach and make you feel good even when you are sick. So, let's enjoy this recipe.


Ingredients:

1. Chicken with bones: 4-5 small pieces 
2. Onion (roughly chopped): 1/2 cup
3. Ginger (grated): 1/2 tsp
4. Garlic (optional): 1/2 tsp
5. Black Pepper: 4-5
6. Cloves: 4-5
7. Carrots, Beans, Spring Onions: 1/4 cup
8. Salt to taste
9. Crushed Pepper to taste
10. Butter: 1/2 tsp

Method:

1. Take a pressure cooker and add the cleaned and washed chicken pieces with roughly chopped onions, grated ginger, garlic (if using), black pepper, cloves and salt.

2. Pressure cook all the ingredients on high heat for one whistle. Simmer the heat and cook for another 8-10 mins. Remove the cooker from heat and let it cool down.

3. Strain the soup using a strainer and keep aside. You can store this mixture in refrigerator for 7-8 days and use it when you want.

4. Shred the chicken pieces discarding the bones and keep aside.

5. Place a pan on medium heat and add butter. Allow the butter to melt and then add the chopped carrots and beans. Fry them for a minute.

6. Now add the soup mixture and allow it to boil for a minute. Add the shredded chicken pieces.

7. Check the soup for seasoning and adjust it accordingly. 

8. Pour the soup in the serving bowl and garnish it with spring onions and freshly crushed pepper. Enjoy!!
