We just love Thai food, if you ask me to choose between Chinese and Thai food; I'll always go for the later one. So, today I thought of sharing a recipe which is one of my favorites whenever I think of a Thai Cuisine. Yes, it's none other than Pad Thai.......a famous Thailand street food.
The Asian store in my neighborhood carries so many sauces which always compels me to pick and try each of them; but thanks to the Chinese/Thai script which restricts me to do so and I always stick to the basic ones.
When it comes to Thai food I love their Chicken Satay, Dumplings, Spring rolls, Tom Yum Soup, Basil Fried Rice, Pad Kee Mow and the list goes on. Although (for novice like us) Chinese and Thai cuisine have a very minute difference but I love the flavors of Thai cuisine.
Pad Thai or Phad Thai it's a stir-fried rice noodle dish commonly served as a street food and at most of the restaurants in Thailand. Preparing any kind of noodles is a time taking process because it needs a lot of pre-cooking time but the actual cooking time is very less. Just fry the protein & veggies add sauces and noodles. Stir fry them for few minutes and you're served.
Ingredients:
1. Rice Noodles: 1 packet
2. Chicken Breast: 1 (cut into thin strips)
3. Eggs: 3
4. Soy Sauce: 1/4 cup + 1 tbsp
5. Oyster Sauce: 1 tbsp
6. Chilli Garlic Sauce: 1 tbsp + 1/2 tsp
7. Hoisin Sauce: 1/2 tsp
8. Lemon: 1/2 (juice of 1/2 lemon)
9. Sugar: 1 tbsp
10. Garlic (finely chopped): 5-6 cloves
11. Veggies of your choice (beans, capsicum, carrots, onions, spring onions, sprouted beans)
12. Peanuts (Roasted and crushed): 15-20
13. Oil for cooking
14. Salt as per taste
15. Black Pepper powder as per taste
Method:
1. Soak the rice noodles in cold water for 5-10 mins. Don't overdo it otherwise the noodles will become soggy. Take them out in a plate and keep aside.
2. Marinate the chicken in soy sauce, chili garlic sauce, salt and black pepper.
3. Chopped the veggies of your choice. I like to use beans, capsicum, carrots, onions, spring onions and sprouted beans which is very easily available in any of the Asian grocery stores.
4. Heat oil in a wok and add the eggs to make scrambled eggs. Add salt as per your taste. Keep aside.
5. In the same wok add more oil and cook the marinated chicken for 2-3 mins or until the meat is fully cooked.
6. Heat more oil in the same wok and add finely chopped garlic. Take care not to burn the garlic. Add the veggies and stir fry them for 1-2 mins. I like a bit of crunch in my veggies so I don't fry them too much. You can do it as per your choice.
7. Take a small bowl and mix the sauces, sugar and lemon juice. Add this mixture to the wok and cook for a minute.
8. Add the noodles and mix everything well. Now it's time to add chicken and scrambled eggs. Toss them gently until everything is nicely mixed and cooked.
9. Check the seasoning add salt and pepper if required. When you're ready to serve add roasted and crushed peanuts and give the noodles a final toss.
10. Take a serving plate and place the Pad Thai noodles on them. Garnish it with cilantro, spring onions, lemon, peanuts (roasted and crushed) and top it with sprouted beans. You're done!!
