Banana Walnut Muffins



Hello, my Foodie Friends...... I hope you all are doing fine and spending the lockdown period cooking and relaxing with your family members. During this lockdown phase, I have developed a habit of baking at least thrice a week. Though I love baking but not this time of the year when baking makes you sweat. 



As of now, you all might know I have a 3-year-old son. He loves to help me in the kitchen. So last week we decided to bake some Banana Walnut Muffins as he loves home-baked cakes and muffins. Luckily here in Kolkata, the weather is too good these days.



These Banana Walnut Muffins taste too yumm and can be made in a jiffy. Whenever I have some overripe Bananas this is the way I use them. So, without any further ado, let's begin with the recipe:

Samosa



Hello, my foodie friends....... I hope you all are doing good and following the lockdown guidelines. These days we all are staying home and experimenting with the food which we used to relish outside or the famous street-side delicacies. My all social media handles are filled with the posts of Pani-puri, Jalebi, Rasgulla, Dhokla, Samosa, and whatnot. 



We all love Samosas, isn't it but amid this lockdown neither we can go out nor we can enjoy the outside food. However, this lockdown cannot stop us from enjoying and relishing something homemade. Anything homemade is always better than store-bought or having them at street-side stalls or restaurants. Making Samosa is quite tricky. It involves 3 main steps:
  • Kneading the dough
  • Preparing the filling
  • Making the Samosas
  • Frying the Samosas

I have made Samosa a number of times with different kinds of fillings like potato, cauliflower, chicken, paneer, etc. But perfected this recipe after many years. Making Samosas requires a lot of patience because kneading the dough requires lot of muscle strength and then frying the samosas requires a lot of time.

Nankhatai (With & Without Oven)


Hello friends......hope you all are doing fine and staying at home for the single cause....Yes, that's Corona Virus (COVID-19). We all have to stay together and fight this pandemic and most importantly STAY AT HOME.

It's been 16 days we all are at home and following the lockdown guidelines. We all are enjoying happy times with our family. But, sometimes it's very boring and tedious to stay at home and do everyday chores. That is where we need to boost up ourselves and engage ourselves in doing things we love to do but due to the lack of time, it has taken a side stand.



Lately, I have developed a new interest and i.e doing baking with my family. Yes, we three of us try to bake cakes and cookies at least once a week and trust me it's very relaxing. This time we baked Cardamom Flavored Cookies or Nankhatais. I have already shared the recipe of Nankhatais a few years back but I have baked those cookies in the oven. This time I'll show you both the methods with and without oven.

Nankhatais are eggless cardamom flavored cookies. These shortbread styles cookies are crunchy & crumbly with a sensational aroma of cardamom. 

These cookies are very simple to make and require very few ingredients which we always have at our home. So, whenever you crave some homemade cookies try them out. I can assure once you make and store it you can't keep yourself away from these goodies.



So, without getting frustrated amid the lockdown and doing panic shopping try to utilize this time in doing something creative and keep yourself engaged. I'm sure we will walk through this crisis. AMEN!!

Matka Kulfi with just 2 Ingredients


Hello, Foodies hope you all are doing fine and staying home following the lockdown guidelines. We all know the ongoing situation around the world. Watching the news channels,  reading the news over phones and forwarded messages sometimes make us depressed. So, it's always better to do something which makes you happy and you feel relaxed.

If you ask me cooking and baking makes me more than happy and I forget all my tension and worries. Cooking for our family and most importantly their favorite dishes gives immense pleasure and what's better than enjoying it when every member of your family is together. 



I would like to suggest all my viewers rather than panicking and getting frustrated involve yourself in something which makes you and your inner soul happy. It can be anything starting from cooking, reading, dancing, singing, painting, listening to music or any other hobby which has taken a side stand or you were unable to do due to your busy lifestyle.


Today in this video I'll be sharing the recipe of Matka Kulfi. I have already shared the recipe of Mango Kulfi (click here). But this Kulfi recipe is very special. I have made this Kulfi with only 2 ingredients. Yes, you heard it right KULFI WITH JUST 2 INGREDIENTS. Adding chopped cashew nuts, pistachios, almonds, and cardamom powder is completely optional. You can still make this Matka Kulfi with just Milk and Sugar and enjoy it with your family amid this lockdown situation.
