Soft and Spongy Idli

Hello, my foodie friends....... I hope this post finds you well. In order to stay energetic and enthusiastic the whole day it's very important to have a healthy breakfast. I always stress on having breakfast and making it healthy.

Today's post is all about a South Indian delicacy Idli. Idli's are soft, spongy savory cake made from fermented rice and lentil batter. The lentil used here is Urad Daal. Idlis are generally served with Sambhar and Coconut chutney. Having Idlis in breakfast is a very common scene in every South Indian household but nowadays it has become popular worldwide. It is one of the healthiest breakfasts known as it can be served to babies,  aged persons and even to the people on diet.

Idlis can be made in two ways:
  • Rice Idli: Using rice along with urad daal
  • Rava Idli: Using rava or semolina along with urad daal
For making soft and fluffy Idlis rice and daal are soaked in water for about 4-5 hours. There are many controversies whether rice and urad daal should be soaked together or separately but to be very frank I don't find any difference in the texture or taste of the Idlis. So, I soak them together and even grind them together but if you want you can soak them separately, grind them separately and then mix them together.

Today in this post we'll make some soft and spongy Idlis. It is very easy to make and just needs 15 mins of your time if you do the prep work beforehand.

So, let's begin with the recipe:

Ingredients:

1. Rice: 6 cups
2. Urad Daal : 2 cups
3. Methi Dana/ Fenugreek Seeds: 1 tbsp
4. Oil: for brushing
5. Water: 1/4 cup

Method:

1. Wash and soak the rice, urad dal and methi dana overnight or for at least 4 hours.

2. Take a grinder and grind the rice-dal mixture in batches. Add water if needed.

3. Take out the batter in a bowl and allow it to ferment for at least 8-10 hours.

4. If the batter is not properly fermented then allow it to ferment again for a few hrs.

5. Add salt into the batter and mix it well.

6. Now take the Idli making pan and brush oil in each of the cavities.

7. Pour a paddle full of Idli batter in each of the cavity.

8. Boil enough water in Idli maker and place the idli pans carefully in it. Cook the Idlis for 8-10 mins on high heat.

9. After 10 mins check the Idlis, if not then cook it again for 2-3 minutes.

10. Once they cool down take them out of the pans using a knife.

11. Serve the Idlis with Sambar and Coconut Chutney. Enjoy!!
