Veg Mayo Sandwich

              

Hello my Foodie Friends.......hope you all are doing great. We ladies have one universal problem WHAT TO PACK FOR LUNCHBOX? Whether we're making lunchbox for our husbands or for our kids every morning we face the same issue.


Whether we ladies are working or non-working our mornings are usually very busy. So, if we do some meal planning a night before that can help us in making our mornings a bit smooth. Moreover, making our kids eat vegetables is a very tedious task. We are always in search of new and different ideas of how to hide veggies in their meal so they don't understand and can eat some vegetables.


So, today in this video we'll make Veg Mayonnaise Sandwich which is loaded with veggies and every kid's favorite Mayonnaise. This recipe is very easy to make and just needs 10 mins of your time if you do the prep work beforehand.

Pav Bhaji

             

Hello Peeps.....hope you all are doing good and enjoying this monsoon in your respective regions. For us monsoon is yet to come in full swing. 

Being a food blogger and video creator, I relate everything to food. There are some food items which we really enjoy during the monsoon time. If you're a big foodie like me then I guess you can relate what I am referring to. Anyway, what is the one food item that you really enjoy during the monsoon time? For us it is Pakoras (fritters) and Elaichi wali Chai (cardamom flavored Tea).



Coming on to today's post which is a Pav Bhaji; a Pav is nothing but a Dinner Roll toasted with butter and Bhaji is a mixture of numerous vegetables, spices and butter blended together to form a very healthy dish. 



Pav Bhaji can be a very healthy dish if you make it in a healthier manner. Since it has number of veggies you may serve it to your child and they would love it big time. You may add any vegetable of your choice but generally Potatoes, Capsicum, Carrots, Green Beans and Cauliflower are used to make Pav Bhaji. 




Here, I have used combination of Butter and Oil but you can use any one of it or both as per your requirement. So, without doing any further ado let's begin with the recipe:

Burrito Bowl



As of now you all know that we are big time foodie. Here, I would like to thank my husband bcoz of whom I was able to discover this aspect of my life that I love cooking. It was boz of him that I am able to taste different national and international cuisines. Some are totally rotten tomatoes and some are so delectable that we love to taste them again and again.

Chipotle is one of such restaurants in America where we used to have our brunch on the weekends (when we were in the USA). Chipotle is a very famous Mexican Grill renowned for their Burritos and Tacos. It was my personal favorite from health and nutrition factor. 

Burrito is nothing but a Mexican dish consisting of a flour tortilla rolled round with savoury filling typically of minced meat, veggies, beans etc. But today I'm going to share the recipe of Burrito Bowl. The best part of this dish is that it's completely customizable. You can add or delete any of the item you don't like bcoz there's number of goodies which goes round it.



It includes lemon-cilantro rice, pinto/black beans, corn salsa, roasted bell peppers and onions, lettuce, guacamole, cheese, sour cream. In restaurant too I never added the last three ingredients to my rice bowl (guacamole, cheese, sour cream) so here too I'm not using it in my recipe but if you like you can definitely add it to your bowl.

Shahi Tukda/ Bread Pudding


We all know Rakhi or Raksha Bandhan is just around the corner. It's an Indian festival which celebrates the loving relationship between every brother-sister. This festival has many historical stories related to it; Rajput queens used to send raksha (safety) threads to the neighbouring rulers with a promise to protect her in each and every circumstances.


Rakhi is a sacred thread tied on the wrist of brothers by their sisters which is embellished with love and affection. It is observed on Rakhi Poornima (full moon day) in the month of Shravana. This thread is considered very strong as it binds the inseparable love between a brother and a sister. 


This year I decided to make Shahi Tukda for my family to celebrate this festival. It's a royal treat for you and your family anytime. It's origin can be found in the Mughal era. Mughlai dishes are bit on the laborious side but this dish is very easy to make and you can do the preparations earlier and assemble it when you want to serve. 


I'm a big foodie for sure and I love to have something sweet after I finish my lunch but at the same time I'm calorie conscious too. So, I love to make such kind of rich desserts on special occasions and gobble it down. I have just toasted the bread slices in little bit of butter but if you want you can deep fry them in butter or ghee (clarified butter).

So, make this dessert this Raksha Bandhan and enjoy it with your family.

Murg Makhani/ Butter Chicken


Murg Makhani or Butter Chicken is one of our favorite dishes when it comes to Chicken preparations and we always find ourselves ordering this dish whenever we go out for dinner in a restaurant. We both are huge fan of Makhani recipes whether it's:
we just love all of them, actually you can never go wrong with these dishes. 



The origin of this recipe is from a restaurant named "Moti Mahal" in Delhi where the leftover Tandoori Chicken pieces is cooked in a rich, buttery, creamy tomato based curry.


I'm so much addicted to this Makhani gravy that these days the above mentioned dishes are getting place on my dinning table very frequently. Moreover, if you have this Makhani gravy handy then you can come out with so many options either veg or non-veg which is very helpful when all of sudden some guests arrives at your place.

Palmiers.......Cute Little Hearts Cookies


Palmiers is a French Pastry which is also known as Elephant Ears or Angel Wings because of its shape. It is extremely light, flaky, caramely and buttery. Each time I bake Palmiers, I just fell amazed that how effortless and painless its recipe is. It's a perfect snack to munch on when you want something to eat during those odd hours of the day. 

These cookies are made up of puff pastry which is a dough wrapped around butter so the butter gets completely enclosed within the dough which is then rolled and folded over to double the number of layers and then the whole process is repeated. The number of times you repeat this process the more flaky your pastry will become. But making puff pastry at home is a very time consuming process and needs a lot of elbow greasing. Thanks to the frozen puff pastry sheets available at the supermarkets these days.



Making Palmiers at home becomes super easy if we have frozen puff pastry sheets in our freezer. You just need to thaw them, roll them, sprinkle granulated sugar and bake them. Ta-dah you're done! I know it's very difficult to resist until they cool down. I myself can't stay away from them for long.

Nankhatai....Cardamom Flavored Eggless Cookies



Holiday Season is here.......I just love this time of the year when you can see decorations everywhere. Everything is in the festive mood. Everything becomes bright colored and sparkling. You can see decorations and fairy lights all around. Even if you don't celebrate this festive season its very hard not to get enticed from these lights and decorations.

A light breeze of cold air, foggy mornings, warmth of the woolen clothes, fragrance of hot coffee are the things which we can enjoy at this time of the year. 

Baking is my way of celebrating festive season. The aroma of freshly baked cookies and cakes embarks holidays. This time I was very eager to bake a very basic cardamom flavored cookie which is also known as "Nankhatai" in India.

These cookies are very simple to make and require very few ingredients which we always have at our home. So, whenever you crave for some homemade cookies try them out. I can assure once you make and store it you can't keep yourself away from these goodies.

Garlic Naan......Garlic Flavored Yeast Free Indian Flat Bread


Naan.......A flat Indian Bread which doesn't need much introduction. It is appreciated all over the world. A meal in an Indian restaurant is incomplete without having "Naan" in it. A Naan is an oval-shaped, soft, pillow-like bread which is brushed with butter and pairs well with every Veg and Non-Veg curries . 

Traditionally, Naans are prepared in Tandoor (Clay Oven) on extremely high temperature. Since I don't have that kind of oven I make it in my conventional oven. It can also be made on a stove-top or skillet. There are many variations of Naan. You can flavor it with whatever herb you want and stuff it with your choice of vegetable or meat.  

I always thought making Naan at home is impossible. The texture and taste we get in the restaurant is impossible to replicate. But then one fine day I made "Paneer Makhani" and was thinking it would taste great with "Garlic Naan". It was then I experimented with the recipe of Naan and was quite amazed with the result.

Paneer Butter Masala.....Cottage Cheese in a rich creamy gravy




Paneer Butter Masala.......Whenever I hear this name a clear view of Paneer cooked in bright orange colored rich creamy gravy runs through my mind which looks so inviting.  Anyway let me stop my day-dreaming and return to the post.

I am a great fan of North Indian cuisine may be that's because I have spent 7 years of my life in Punjab, India. So ask me anything vegetarian, I would say it's Paneer Butter Masala. A very popular North Indian dish which has now secured its place in the menu card of most of the Indian restaurants around the globe. As the name is self explanatory Paneer (Cheese) cooked in Butter and flavored with various spices. The gravy is thickened by using cream and cashew nut paste (though optional) which serve as the base of the gravy.

I love each and every preparation of Paneer whether its Palak Paneer, Matar Paneer, Paneer Paratha, Paneer Bhurji and the list goes on......

I don't find much difference between "Paneer Butter Masala", "Paneer Makhani" and "Shahi Paneer" where all these dishes are made with onions, tomatoes, butter, cream and nuts. It solely depends upon the preference of the cook to add or subtract the ingredients. Whatever the case is, the end result is scrumptious and mouth watering dish served on your plate.
