Fruit 'N' Nut Cake......Christmas Special


Hello dear foodies, I know I'm little bit late for posting this Christmas special recipe but I know there are some people like me who are still looking for those last minute ideas for making this Holiday Season special for their friends and families.

If you are a regular follower of my blog then you must have found many Holiday Special recipes here:

I am pleased to add one more recipe to this list i.e. Fruit 'N' Nut Cake. I know there are thousand of recipes available on the internet but my take on this Christmas Special Cake is very basic. As we both are non-alcoholic so I didn't add any rum or brandy flavor to this cake. If you want you may go ahead and add it.


So, without any further blabbering let's begin with the recipe:




Ingredients:


1. All purpose flour: 1 cup
2. Unsalted butter: 1 cup 
3. Sugar: 1 cup
4. Baking Powder: 1 tbsp
5. Vanilla Extract: 1 tbsp
6. Milk: 1/4 cup
7. Salt: 1 tsp
8. Eggs: 4
9. Fruits n Nuts of your choice (roughly chopped)

Method:


1. Bring all the ingredients to room temperature.

2. Preheat the oven to 350 F/180 C.

3. Grease the pan with butter and line it with a parchment paper.

4. Sift together all purpose flour, baking powder and salt. Keep it aside.

5. Take unsalted butter and powdered sugar in a bowl and beat well with your hand mixer on medium speed until it becomes creamy.

6. Crack all the eggs in a large bowl and beat them until it becomes light and fluffy. It will take 8-10 mins on medium speed. Add vanilla extract and again beat the mixture for a minute.

7. Add flour mixture to the butter-sugar mixture and mix with the help of a spatula.

8. Gently add the beaten eggs to the flour-butter-sugar mixture and combine everything by using cut and fold process. At this point add the chopped fruits n nuts.

9. Add milk and mix well by using the same cut and fold process.

10. Pour this batter into the pan lined with parchment paper and put it into the oven for 40-45 mins.

11. To test whether your cake is done or not, take a toothpick and insert it into the center. If it's clean your cake is done otherwise bake it for a minute or two.

12. Take out the cake from the oven and let it cool down for 10 mins. Enjoy!!
