Egg Biryani

          

Hello, my foodie friends..........I hope you all are enjoying the holiday season and preparing and relishing the cakes, cookies, and a variety of desserts. What are your plans for the new year party? Today in this blog post I'm sharing a Biryani recipe. This is I have prepared Biryani with Eggs. Biryani is a very popular Indian dish that is made or served on special occasions. Usually, Biryani is made from Chicken or Mutton but there are veg variations of Biryani too like Paneer Biryani, Veg Biryani, Soya Biryani. Today we're going to make Egg Biryani which is loved by the people who don't eat Chicken or Mutton.

Eggless Bread Pudding/ Caramel Bread Pudding

            

Hello Peeps.... I hope you all are doing well this holiday season. What are your plans during this last week of the decade? Here, in Kolkata, the temperature is below average and that's the reason we're sitting at home and sipping piping hot soups and binging some of our favorite web series. That's how we like to spend our quality time when we're at home.

In Kolkata, all the shops are filled with mini Christmas trees and Christmas decor items. You can see the bakery shops are filled with Christmas special cakes. Even the street side shops are selling different varieties of cakes. During this time of the year, everybody is joyful, delighted and full of life. When everything is happy and merry all around how can food be aloof from these festivities. Everything is looking festive and charismatic. 



This blog post is a little different as I'm sharing a recipe that is very close to my heart. Today I'm sharing the recipe of Eggless Bread Pudding. Sooji/ Rava Appe

           

Hello my Foodie Friends...........Winter has arrived in almost all the regions of India and the market is loaded with all the winter veggies. Whenever I visit the market I can't resist myself from buying them without giving a second thought what will I do with them. 



Winter is known for veggies like green beans, capsicum, carrots, cauliflower etc. You can enjoy them in number of ways but it's very tricky to feed veggies to our kids. Moreover if your baby is a picky or fussy eater then this task becomes more troublesome. We all struggle to come up with new ideas and recipes for lunch box and breakfast. Even if you give your kid's favorite dish in their lunch box the lunchbox is never empty. 



Therefore, we as mother's should come up with some new and brilliant ideas to feed veggies to our babies. The food should look interesting and cute that's the trick to allure the kids. 

So, today in this video we'll make Sooji Appam or Rava Appe which is loaded with veggies. It is very easy to make and just needs 15 mins of your time if you do the prep work beforehand.

Sweet Corn Soup

           

Hello my foodie friends hope you all are doing great. What is your favorite appetizer when you order food in a restaurant? For us it is always Soup. My family loves Soup whether it is
  • Tomato Soup
  • Hot n Sour Soup
  • Chicken Clear Soup
  • Manchow Soup 
                

Soups are our favorite appetizer despite of what food we are ordering. Soups can be both veg or non-veg but I like my Soups to be vegetarian and filled with lot of veggies. Among all the soups Sweet Corn Soup is my favorite. Basically, corn is my favorite, anything with corn and I fall for it.


Sweet Corn Soup is a kind of soup which is on the thicker side as compared to any other soup because of the addition of corn paste in it. It can be made from fresh corn or even with frozen one. This completely depends on the availability of sweet corn. If you have frozen corn in your freezer you can enjoy this Soup anytime of the year.


The flavors of this soup is very simple without the addition of any kind of sauces. All the magic is done by the flavor of Sweet Corn. I would highly recommend you to use fresh or frozen corn and not the canned one because this can make a huge difference in the texture of the soup.

Hot n Sour Soup

             

Hello my Foodie Friends.......hope you all are doing great. How's the weather treating you these days? The winter season is almost here and it's time to pack all our light, airy, flowy, peachy summer dresses and start getting ready to wear thick woolen clothes. Although I love my jackets, sweaters, scarfs and boots but the love for summer clothes is incomparable.


What do you love about Winters? Being a food blogger I love winter fruits and vegetables. There is so much of variety in the veggie and fruit market in the winter season which you can't get in any other season. Moreover being a Bong, I love indulging myself in Fulkopir Singhara (Samosa filled with Cauliflower stuffing), Koraishuti r Kochuri and Aloor Dum (Puri stuffed with Peas stuffing and Dum Aloo), Nolen Gurer Mishti (Date Palm Jaggery Sweets), Vegetable Chop (Vegetable Fritters) in this season.

Winters can also be enjoyed with Soups. A hot cup of soup on a lazy Winter evening can energize you completely. Creamy Tomato Soup

            

Hello Peeps........The festive season is over now what we're left with are Christmas and New Year but that too are almost a month apart. There is no reason to be disheartened because Winter's are almost here and it's time to indulge ourself in some winter delicacies. 


The markets are getting filled with winter fruits and vegetables. We always go to buy fresh produce from the market and our heart goes garden-garden when we see those fresh leafy vegetables and  fruits. We feel like to buy all of them but have to restrict ourself. 


Winter's are synonyms to Soups. Imagine yourself on a lazy winter evening, getting cozy on your couch, watching Netflix and sipping on hot piping soup. I can completely see myself indulging in that goodness.


So, today's recipe is a rich creamy Tomato Soup with some homemade Croutons. You will need fresh and pulpy Tomatoes for making this soup. The color of the Tomato Soup is very important. You can get it right only when you will use fresh and red Tomatoes.

Coconut Ladoo/ Nariyal Ladoo........Instant Diwali Desserts

            

Hello my Foodie Friends......hope you all are enjoying the festive season and must be busy in shopping, travelling, eating, cleaning etc etc etc. Navratri and Kojagari Lakshmi Pooja is over and hope you have enjoyed it thoroughly. Festive season fills us with good vibes and energy. 



Now it's time for another major festival and i.e. Diwali. I know you all are busy in cleaning your home, planning and shopping for Diwali decor items and preparing Diwali snacks. While we're so much into Diwali cleaning and planning, it's obvious that cooking takes a side track and we then switch to store bought sweets and snacks.



To solve this issue we have come up with instant Diwali desserts and snacks so keep an eye on this space. So, the first recipe in this series is Instant Coconut Ladoo or Nariyal Ladoo which is very easy to prepare and takes very less time.



Nariyal Ladoo or Coconut Ladoo don't need any introduction in Indian households. It is usually made during the festivals especially during the Durga Puja/ Diwali/ Lokkhi Pujo/  Lakshmi Puja. As the name suggests it is made up of Coconut, Milk, Sugar and Cardamom to add some flavor to the Ladoo.

The Ladoos are of two kinds one made with Jaggery or Gur and are deep brown in color and the other made with Sugar and are pristine white in color. My personal liking is the later one (the one made with Sugar) and that is what I am sharing with you all.

Hope you all are having a fun filled festive season and enjoying with your friends and family members. Indian Festivals are incomplete without get togethers and Food isn't it? As you all know that Kolkata is the king of Street Food, there are so many options available here. 


You can get the real essence of Street Food during the Durga Puja. All the Pandals are surrounded with so many options that sometimes it's difficult to decide which one to select. Bhel Puri is a very popular Indian Street Food which is best enjoyed during the monsoon season. That said, if we can prepare that Bhel Puri at home; it can be hygienic and healthy too.

Egg Roll

            

Hello Foodies......Hope you all are doing great and enjoying the festive season. The biggest festival of Bengalis Durga Puja is just around the corner. Which means lot of shopping, pandal hopping, makeup, adda (meeting and chit-chat with friends) and obviously Food.

As Durga Puja is just around the corner so we thought of sharing a very popular street food of Kolkata and that is "Egg Roll". Kolkata is the hub of Street Food. There is so much variety in the food that we can find endless options to eat but will not get fed up.

Chicken Nuggets

            

Hello Peeps...hope you all are doing great. The festive season is just around the corner and it's time to celebrate all the festivals with your friends and family members. It's that time of the season when we visit each other's place, exchange gifts and have lots of fun. 


Any festivity is incomplete without food whether we have friends and family visiting our place or we go out exotic dinner or enjoy the street side food while hopping the Puja Pandals.


But between all these hustle-bustle we can never compromise the food items that we  feed to our family. We have to take care of the hygiene and the heathiness. Obviously, we all want to enjoy the festivals with full enthusiasm, energy and with a good health.


Today's recipe is Chicken Nuggets or Chicken Pakoras. We all love Chicken Nuggets isn't it? Especially our kids they just go gaga over them. Whenever we urge to have Chicken Nuggets we either go to McDonald's or KFC and satisfy our craving but think if we can make it at home, THEN?


Anything homemade is always better than store bought or having them at restaurants. These Chicken Nuggets recipe are too simple to make and require very few ingredients....trust me!

Instant Rava Dhokla

Crispy Aloo Tikki.......Potato Cutlets

            

Hello Foodies......hope you all are doing great and enjoying this monsoon season with your favorite food. Let me ask you what is your favorite food that you relish while enjoying the rain with your cuppa? I like to sit in my balcony having a cup of chai with some fried stuff and yes playing my favorite monsoon songs in the background. That's my way to enjoy monsoons and relax. 


Although each and every year monsoon is not so pleasant in many regions of our country as it brings floods, epidemics, cloud bursts, landslides and so many natural calamities with it. Nevertheless, it's the part of the season and we have to accept it the way it is.

Soya Manchurian

           

Hello my Foodie Friends.....hope you all are keeping well. Do you love Street Food? Well, there are hardly any person who doesn't love Indian Street Food. There is so much of variety available in the street food that if we go from one region to another we can find a different variety of street food altogether.


The one thing apart from the regional street food which is common in every region is the Indo-Chinese cuisine. We all love it, isn't it! Whether it's a Chowmein, Chilli Chicken, Fried Rice or Manchurian we start drooling whenever we hear these names. 

Every Restaurant, street side hawkers and even every household has its own variation of making any Indo-Chinese dish. Today's post is Soya Manchurian which is a very healthy Indo-Chinese dish.


We all know the benefits of including Soybean in our diet. Soybeans have a wealth of benefits, including their ability to improve the metabolism, help in healthy weight gain, protect heart health, defend against colorectal cancer, and reduce the effects of menopause. They improve digestion, promote bone health, protect against birth defects, increase circulation, decrease the risk of diabetes and generally tone up the body.


We all struggle to feed healthy to our kids. Since, kids love Indo-Chinese cuisine so you can prepare Soya Manchurian and offer them. I'm sure they will love it too. You can also serve it as a starter when you have guests coming your way.

Masala Macaroni

            

Hello Peeps....hope you all are doing great. We ladies have one common problem and i.e. what to pack for lunchbox? Especially if you have a toddler or a picky eater kid then this problem is much more daunting. 


We as a mom often struggle what to pack for kids lunchbox or what to make in breakfast which is healthy and well as filling. Our conscience will never allow us to pack store bought so called "Healthy Snacks" for them. Moreover if you have a picky eater at your home then whatever you pack in our kids lunchbox they often bring it back home.


The solution to this problem is giving something which is healthy and as per their liking. Here, in this video we will be making Indian Style Macaroni. Kids love Pasta and since it is loaded with veggies you can pack this in their lunchbox without any guilt.

Dhaba Style Dal Fry

           

Hello my foodie friends, hope you all are doing great. Today's recipe is all about Basic Cooking. Sometimes, we get so much into cooking special dinner and lunch for our friends and families that we forget about what we relish the most. 


The most comforting food which we can relish anytime and everytime is our basic staple food. It can be different for different people but for me is Dal-Chawal with a dollop of homemade Ghee. When I'm too tired to cook anything and just want to relax while having my supper I rely on Daal-Chawal. For me nothing can beat the flavor of Daal-Chawal when I'm too tired or sick.



If you want to make your simple Dal Fry a bit different then give a Dhaba style tadka to it and then see the magic. This tadka will give an instant taste to this Dal Fry and will level up the taste.

Egg Devil

                

Hello Peeps.....Hope you all are doing great and relishing upon the Chaats and Bhajiyas this Monsoon time. Kolkata is yet to receive Monsoon in full swing; nevertheless we're still waiting for it and relishing upon those delicacies in hope of the Monsoon, I think that's how the foodies are always!!!



Chaats, Bhajiyas, Pakodas are all synonyms to Monsoon. We can't even imagine Monsoon with my Elaichi wali Chai and a bowl full of Pakodas. It's so comforting and relaxing to enjoy your evening time with your cuppa and some Pakodas.



Today in this post I'm going to share one of the very famous Pakoda from the hub of Indian Street Foods i.e. Egg Devil. Kolkata is very popular for its street food Egg Devil is one of them. Egg Devils or Egg Pakodas are made by coating the boiled eggs with a spicy potato mixture and then dipping in corn flour slurry, coating in breadcrumbs and finally deep fried until golden brown.



Making Egg Devils is a bit tedious task as it has few steps involved:
  1. Boiling Eggs & Potatoes
  2. Preparing the Potato mixture
  3. Coating the Eggs with the Potato mixture
  4. Preparing the outer layer of the Pakoda
  5. Deep Frying
Believe me if you're a Pakoda lover like me then believe me these 5 steps are nothing when you know the end result. They are enjoyed with some salad, mustard sauce (Kasundi) and piping hot cup of Tea. 




I would like to make a special mention here about the Mustard Sauce (Kasundi). Kasundi is a spicy and tangy sauce prepared from raw mangoes and mustard seeds and is very popular dipping sauce here in Kolkata. You can get it in any local grocery shop but outside Kolkata I don't know whether it is available or not. But availability or non-availability of Kasundi should not stop you from enjoying this delectable Egg Devil. You can still relish it with Tomato Ketchup & salad.



So, without doing any further ado let's begin with the recipe:

Ingredients:

For the stuffing:

1. Boiled Potatoes (medium size): 3
2. Onion (finely chopped): 1/2 cup
3. Ginger-Garlic Paste: 1 tbsp
4. Coriander Leaves: 1/4 cup
5. Turmeric Powder: 1/4 tsp
6. Red Chili Powder: 1/2 tsp
7. Cumin Powder: 1/2 tsp
8. Coriander Powder: 1/2 tsp
9. Green Chilies: 2-3
10. Salt to taste
11. Oil for cooking

For the Egg Devils/ Egg Pakodas:

1. Boiled Eggs: 3
2. Salt to taste
3. Breadcrumbs: 1 cup
4. Corn Flour: 3 tbsp
5. Oil for frying



Method:

1. Cut the boiled eggs into halves and season it with salt. Keep them aside.

2. Heat oil in a pan and add the finely chopped onions. Fry it until it becomes soft.

3. Add ginger-garlic paste and fry it until the raw flavor is gone.

4. Now add the chopped green chilies and cook the mixture for a minute.

5. Add powdered spices and cook the mixture for another minute.

6. Finally add chopped coriander leaves and let the stuffing cool down.

7. Once the stuffing is at room temp take a small portion and flatten it on your palms.

8. Place an egg on it and cover it properly with the potato stuffing. Try to keep the shape of the egg intact so that the Egg Pakora resembles an egg.

9. Dip the egg devil into the prepared corn flour slurry and then coat it nicely with bread crumbs.

10. Heat oil in a pan and add the egg devils one by one. Fry them on medium-high heat until golden brown from all the sides. This will take roughly around 6-7 mins.  

11. Once done take them out on a plate.

12. Serve the Egg Devils or Egg Pakodas with salad, mustard sauce (kasundi) and some elaichi wali chai. Enjoy!!
