Hot n Sour Soup

             

Hello my Foodie Friends.......hope you all are doing great. How's the weather treating you these days? The winter season is almost here and it's time to pack all our light, airy, flowy, peachy summer dresses and start getting ready to wear thick woolen clothes. Although I love my jackets, sweaters, scarfs and boots but the love for summer clothes is incomparable.


What do you love about Winters? Being a food blogger I love winter fruits and vegetables. There is so much of variety in the veggie and fruit market in the winter season which you can't get in any other season. Moreover being a Bong, I love indulging myself in Fulkopir Singhara (Samosa filled with Cauliflower stuffing), Koraishuti r Kochuri and Aloor Dum (Puri stuffed with Peas stuffing and Dum Aloo), Nolen Gurer Mishti (Date Palm Jaggery Sweets), Vegetable Chop (Vegetable Fritters) in this season.

Winters can also be enjoyed with Soups. A hot cup of soup on a lazy Winter evening can energize you completely. Moreover, if you're suffering from cough and cold then have a bowl of soup, you can get instant relief. This works for me so well. I have already shared the recipe of Creamy Tomato Soup on my blog. In this post I'm going to share the recipe of Hot n Sour Soup which is not only easy but you can prepare it instantly. You can always add or subtract the veggies as per your liking. So, without any further ado let's begin with the recipe:



Ingredients:



1. Veggies: 1 cup (carrots, beans, cabbage, capsicum, onion, ginger & garlic)

2. Soy Sauce: 2 tsp
3. Vinegar: 1 tsp
4. Red Chilli Sauce: 1 tsp
5. Corn Flour: 3 tsp
6. Boiled Noodles: 8-10 strands
7. Black Pepper Powder: 1 tsp
8. Salt: to taste
9. Butter: 1 tbsp


Method:

1. Coat the boiled noodles with corn flour.

2. Heat oil in a pan and fry the noodles until crisp.

3. Once done take them out in a plate.

4. In a separate pan add butter and let it melt. 

5. Add the chopped ginger and garlic. Fry them for 30 seconds. Take care not to burn them.

6. Now add the finely chopped veggies and fry them for a minute or until they become soft. 

7. Add water and let it simmer for 2 minutes.

8. Now add soy sauce, vinegar and red chilli sauce. Boil the soup for 2 minutes.

9. Add salt to taste and black pepper powder. 

10. Take corn flour in a bowl and add water to make corn flour slurry. This will help in thickening our soup. 

12. Our hot & sour soup is now ready. Switch off the flame.

13. Take out the Hot & Sour Soup in soup bowls and garnish them with fried noodles. Enjoy!!
