Masala Macaroni

Hello Peeps....hope you all are doing great. We ladies have one common problem and i.e. what to pack for lunchbox? Especially if you have a toddler or a picky eater kid then this problem is much more daunting.

We as a mom often struggle what to pack for kids lunchbox or what to make in breakfast which is healthy and well as filling. Our conscience will never allow us to pack store bought so called "Healthy Snacks" for them. Moreover if you have a picky eater at your home then whatever you pack in our kids lunchbox they often bring it back home.

The solution to this problem is giving something which is healthy and as per their liking. Here, in this video we will be making Indian Style Macaroni. Kids love Pasta and since it is loaded with veggies you can pack this in their lunchbox without any guilt.

So, let's begin with the recipe:

Ingredients:

1. Macaroni: 1 cup
2. Onions (finely chopped): 2 medium size
3. Tomato (finely chopped): 4 medium size
4. Carrots (finely chopped): 1/4 cup
5. Capsicum (finely chopped): 1/4 cup
6. Beans (finely chopped): 1/4 cup
7. Cumin Seeds: 1/2 tsp
8. Mustard Seeds: 1/2 tsp
9. Ginger-Garlic Paste: 1 tbsp
10. Green Chilies: 2-3
11. Tomato Ketchup: 2 tbsp
12. Red Chili Powder: 1/2 tsp
13. Black Pepper Powder: 1/2 tsp
14. Chaat Masala: 1 tsp
15. Maggie Masala: 1 packet
16. Coriander Leaves: for garnishing
17. Salt to taste
18. Oil for cooking

Method:

1. Heat water in a pan and add 1 tbsp of oil and salt. When the water starts boiling add the Macaroni. Let it cook for about 2-3 mins or until done.

2. Take them out in a bowl and immediately run it under cold water. This will help in removing the starch and our macaroni will not stick to each other.

3. In another pan add cumin seeds, mustard seeds. Let them crackle and then add the finely chopped onions. Let it cook for about  a minute or until soft.

4. Now add the ginger-garlic paste and cook it until the raw flavor is gone.

5. Add chopped capsicum, chopped carrots and beans. Cook them for 2-3 mins on medium heat.

4. At this point add the chopped tomatoes and cook the mixture until the tomatoes become soft. Add salt as per your taste this will fasten the process of cooking.

5. Now add the powdered spices Red Chili Powder, Black Pepper Powder, Chaat Masala, Maggie Masala.

6. Add Tomato Ketchup if you like your Pasta to be little tangy. This way your Pasta will be spicy as well as tangy.

7. Add the boiled Pasta now and mix everything well so that the Pasta is well coated with the masala.

8. Take out the Macaroni in a serving bowl and garnish it with chopped Coriander leaves. Enjoy!!
