Hello Foodies......Hope you all are doing great and enjoying the festive season. The biggest festival of Bengalis Durga Puja is just around the corner. Which means lot of shopping, pandal hopping, makeup, adda (meeting and chit-chat with friends) and obviously Food.
We Bengalis can never think anything without Food. Food takes the center space in everything we do. That's the love we have for Food. Durga Puja means Pandal hopping and lot of junk food. During these days we all forget about diet and hygiene and gulp anything and everything.
As Durga Puja is just around the corner so we thought of sharing a very popular street food of Kolkata and that is "Egg Roll". Kolkata is the hub of Street Food. There is so much variety in the food that we can find endless options to eat but will not get fed up.
Today's recipe is Egg Roll which is nothing but a paratha stuffed with an omelette and spicy salad. So, let's begin with the recipe:
Ingredients:
1. Eggs: 6
2. All Purpose Flour: 2 cups
3. Finely chopped onions: 2 (medium size)
4. Finely chopped cucumber: 1
5. Finely chopped green chillies: 2-3
6. Lemon: 1
7. Black Salt: 1 tsp
8. Chaat Masala: 1 tsp
9. Tomato Ketchup: 6 tsp
10. Oil for kneading & frying: 1/2 cup
11. Salt to taste
Method:
1.Take a bowl and add all purpose flour in it. Add a pinch of salt and 1/4 cup of oil. Mix everything well. The oil should be evenly distributed in the flour.
2. Add water little by little to form a dough out of it. The dough should be neither too soft nor too hard.
4. In another bowl and the finely chopped onion and crush them so that all the slices are separated.
5. Now add the finely chopped cucumber, green chillies, lemon juice, salt, chaat masala and black salt. Mix well with your hands.
6. In a separate bowl crack two eggs. For one egg roll we need 2 eggs. Add a pinch of salt and whisk them nicely.
7. Now take small amount of dough and form a uniform ball out of it. Sprinkle little bit of flour and roll it into a big size paratha.
8. For the lachha paratha we will cut the paratha as shown in the video and then roll it in circular motion.
9. We’ll now again roll it into a paratha.
10. We’ll now work on our plain paratha for that take sufficient amount of dough and roll it into a paratha as we usually do.
11. Place a pan on medium-high heat and toast the paratha from all the sides as we usually do while making a normal parathas.
12. Now drizzle few tsps of oil and fry the paratha from all the sides.
13. In the same pan add a tsp of oil and pour the eggs to make a omelet for our egg roll. Place the paratha on tp of the omelette and press it so that the omelet sticks to the paratha. Flip the paratha once the omelet is done.
14.Our base for the egg roll is now ready. Similarly we’ll work with rest of the parathas. Now take one paratha at a time and add a generous amount of the salad mixture on top of it. Sprinkle some black pepper powder and add 2 tsp tomato ketchup.
15. Roll the paratha cylindrically. Now take a tissue paper or a butter paper and roll half of the egg roll in it. Fold the leftover butter paper like this. Enjoy!!
