Eggless Bread Pudding/ Caramel Bread Pudding

Hello Peeps.... I hope you all are doing well this holiday season. What are your plans during this last week of the decade? Here, in Kolkata, the temperature is below average and that's the reason we're sitting at home and sipping piping hot soups and binging some of our favorite web series. That's how we like to spend our quality time when we're at home.

Christmas is just a few days away. If you're still planning on some holiday special desserts you can click here (click). I have some very delectable recipes available on the blog. Do try them and share how do you like it.

In Kolkata, all the shops are filled with mini Christmas trees and Christmas decor items. You can see the bakery shops are filled with Christmas special cakes. Even the street side shops are selling different varieties of cakes. During this time of the year, everybody is joyful, delighted and full of life. When everything is happy and merry all around how can food be aloof from these festivities. Everything is looking festive and charismatic.

This blog post is a little different as I'm sharing a recipe that is very close to my heart. Today I'm sharing the recipe of Eggless Bread Pudding. I still remember my mom use to make this Pudding around this of the year and we use to gulp it down immediately. I have already posted a variation of this recipe (here).

So, let's begin with the recipe:

Ingredients:

1. Sugar: 1/4 cup + 1/2 cup
2. Milk: 500 ml
3. Custard Powder: 2 tbsp
4. Bread Slices: 6

Method:

1. Take the bread slices and remove the edges.

2. Once all the edges are removed cut the bread slices into small pieces. You don’t need to be perfect here.

3. Add all the bread pieces in a grinder and grind it into fine breadcrumbs.

4. Place a pan on medium heat and add sugar. Don't stir the caramel otherwise, the sugar will crystallize. If required rotate the pan occasionally. As the sugar changes the color to golden turn off the heat.

5. Now carefully pour the caramel into a baking pan and coat it completely. and keep it aside.

6. Take a bowl and add the custard powder. Add water and stir it nicely to make a lump-free mixture.

7. Place a pan on medium heat and add milk. Let it boil. Add the remaining sugar and mix it well.

8. Now add the custard mixture and mix it nicely. Mix everything well so that there are no lumps.

9. Add the breadcrumbs into this mixture and mix well.

10. Pour the custard into the caramel-coated baking dish. Smooth the surface of the pudding and wrap the baking dish with aluminum foil.

11. Boil water in a pan and add the baking dish in it. Now cook the bread pudding for 25-30 mins.

12. Take out the pudding and allow it to cool down at room temp and then refrigerate it for 2 hrs.

13. Remove the pudding from the refrigerator and with the help of a knife take off the edges. Place a plate on top of the baking dish and flip the pudding on it. Tap a few times on the baking dish and the pudding will come out on the plate.

14. With the help of a sharp knife cut the pudding and place it carefully on a plate. Pour the caramel on top of the pudding. Enjoy!!
