Rasgulla Pudding aka Rasgulla Payesh



 Hello fellas.......as the festival of Nolen Gur or Date Palm Jaggery is coming to an end let us all indulge ourselves in some of the delicacies prepared from Nolen Gur. The Harvest festival which is popularly known as "Makar Sankranti" in Hindi and "Poush Sankranti" in Bengali had just passed by and all the desserts prepared had Nolen Gur in them in some way or the other.

This time I thought of making something which doesn't require that much of arm workout and well, it's scrumptious too. The recipe which I'm trying to pen down is Rasgulla Pudding. If some guests are coming your way don't worry you can prepare it instantly; you just need to have Rasgullas handy and you're sorted.

I prepared this recipe with some homemade Rasgullas. You can find the recipe here . So, let's get started:



Ingredients:

For Making Cottage Cheese (Chena): 
1. Milk : 1 liter 
2. Lime Juice : 4 tbsp (mix with 1 tbsp of water)

For Making Sugar Syrup:
1. Sugar : 4 cups
2. Water: 2 cups

For Pudding/Payesh:
1. Milk: 2 cups
2. Date Palm Jaggery (make it into small pieces): 1 cup
3. Almonds (chopped): for garnishing

Method:

1. Prepare the Rasgullas as per the recipe.Click here  for the recipe.

2. For making pudding take a pan and heat milk on medium heat. Cook the milk till it is reduced to half. At this stage turn off the heat and add the date palm jaggery. In this way you can reduce the risk of the milk getting cuddled up.

3. Mix the milk-jaggery mixture very well. Let it cool down and keep it aside.

4. Now assemble the pudding; gently squeeze out the rasgullas to remove the sugar syrup and arrange them in a serving bowl.

5.Pour the milk-jaggery mixture on top of the rasgullas. They will soak up the mixture and regain their shape.


6. Garnish them with the dry fruits of your choice and Enjoy!!
