Vanilla Cupcakes with Strawberry Frosting



Hello my foodie friends.......I was offline for quite a while and missing blogosphere reason being we moved to US again. Yes, it takes a lot of hard work and effort to move from one country to another and we did it twice within a gap of almost a year.

Wrapping up all the things and moving to another country, leaving our families & friends behind is a very difficult task and this time it was even more harder for us as we had settled up everything in our new home and got too much emotionally attached to it. 

Moving to a new city, settling down there and returning back to your scheduled routine takes time and that's what happened to me, I took almost 6 months to flip back. 

I would like to thank some of my blogger friends and followers who really care for me and my work. They were in constant touch with me and supported me during this phase of my life.


Anyway enough of this emotional dialogues I don't want to lose the excitement of writing a post after such a long time. This time I wanted to enjoy my come back with some dessert so what's better than baking. It gives me a sense of relief whenever I'm not feeling good about anything (I was missing my home very badly).

I baked a whole batch of Vanilla cupcakes and decided to do a little bit of frosting so what's better flavor than Strawberry? I used Whipped Topping that is available in the departmental stores which makes your job lot more easier, however, you may use Heavy Whipping Cream too. (whip it with an electric blender or whisk until soft peaks are formed). Meanwhile, I think my cupcake liners should get a special mention here as they are so cute that I couldn't resist baking.


So, let's start with the recipe:



Ingredients:


For Cupcakes:

1. All purpose flour: 1 cup
2. Unsalted butter: 1 cup 
3. Sugar: 1 cup
4. Baking Powder: 1 tbsp
5. Vanilla Extract: 1 tbsp
6. Milk: 1/4 cup
7. Salt: 1 tsp
8. Eggs: 3


For Strawberry Frosting:

1. Whipped Topping 
2. Strawberries: 10-15
3. Granulated Sugar: 1/2 cup

Method:


1. Bring all the ingredients to room temperature.

2. Preheat the oven to 350 F/180 C. 

3. Line your muffin tray with muffin liners.

4. Sift together all purpose flour, baking powder and salt. Keep it aside.

5. Take unsalted butter and powdered sugar in a bowl and beat well with your hand mixer on medium speed until it becomes creamy.

6. Crack all the eggs in a large bowl and beat them until it becomes light and fluffy. It will take 8-10 mins on medium speed. Add vanilla extract and again beat the mixture for a minute.

7. Add flour mixture to the butter-sugar-egg mixture and mix with the help of a spatula.
using cut and fold process. Add milk and mix well.

8. Pour this batter in the muffins tray and put it into the oven for 20-25 mins.

9. To test whether your cupcakes are done or not, take a toothpick and insert it into the center. If it's clean your cupcakes are done otherwise bake it for a minute or two.

10. Take them out from the oven and let it cool down.


11. Now, we can start working on our Strawberry frosting. Take fresh strawberries and wash them properly.

12. Cut them in halves and make a puree out of them. Pour it in a pan and simmer it on low-medium heat.

13. Add sugar and stir it continuously until it reaches the consistency of a sauce. Check the sweetness and adjust it accordingly. Let the sauce cool down completely.

14. Take a bowl add the required amount of whipped topping and gently mix it with the strawberry sauce.

15. Take a piping bag and attach the tip of your choice in it. Fill in the frosting and pipe it over the cupcakes. 

16. Enjoy the vanilla cupcakes with Strawberry Frosting!!
