Hello my foodie friends......hope you'll are doing good. "Torka- Ruti" (Egg Tadka Daal with Chapatis) is one of my go to food whenever I'm in India. In Kolkata it's a very common scene to come across various roadside carts selling Dimer Torka (Egg Tadka Daal) and Ruti (Chapatis) in evening.
Even I used to buy that whenever I was not in the mood of cooking. Even the price is so reasonable that it won't hurt your pockets. But, the guilt of having the roadside food laded with all the dust and unhygienic things won't allow me to enjoy the deliciousness of this very popular food.
So, the foodie inside me woke up again and yelled at me to try this recipe at home. Egg Tadka Daal is nothing but Whole Green Moong Daal topped with scrambled egg. There is another version where the egg is beaten and added into the daal while it's cooking. I like the former one so, I'll be sharing that recipe here.
1. Whole Green Moong Daal: 1 cup
2. Eggs: 2
3. Cumin seeds: 1/2 tsp
4. Onions (chopped): 1/2 cup
5. Ginger-Garlic Paste: 1 tbsp
6. Tomatoes (chopped): 2
7. Turmeric Powder: 1 tsp
8. Red Chili Powder: 1/2 tsp
9. Cumin Powder: 1/2 tsp
10. Coriander Powder: 1/2 tsp
11. Garam Masala Powder: 1/2 tsp
12. Kasuri Methi: 1 tsp
13. Oil: for cooking
14. Salt: to taste
15. Cilantro: for garnishing
16. Green Chilies: 2
Method:
1. Thoroughly wash and soak the daal overnight.
2. Pressure cook daal with a pinch of salt and keep it aside.
3. Place a heavy bottomed pan on medium-high heat and pour oil in it.
4. When the oil is hot enough add the cumin seeds and let them crackle. Now add the chopped onions and fry them until they become translucent.
5. At this point add the ginger-garlic paste and fry it for 2-3 mins or until the raw flavor of ginger-garlic is gone.
6. Add the chopped tomatoes and cook the mixture for another 2-3 mins or until the tomatoes becomes mushy.
7. Now, it's time to add the salt, turmeric powder, red chili powder, cumin powder, kasuri methi and cook it until the oil separates from the mixture.
8. Now add the boiled daal and give it a nice stir until everything is mixed properly. Add water to adjust the consistency. At this point add the green chilies.
9. Cover the lid and let it simmer for 4-5 mins. Take out the lid and check the seasoning. Add salt if needed.
10. In another pan add some oil. When the oil is hot enough add the beaten eggs. Sprinkle some salt and make scrambled eggs. Keep it aside.
11. Uncover the daal and check for the consistency; adjust it as per your liking. Add the scrambled eggs and give it a nice mix. Add butter if you want.
12. Take a serving bowl and take out the Egg Tadka Daal or Dimer Torka as we Bengalis call it . Garnish it with freshly chopped cilantro and serve it with Garlic Naan, Roti or the bread of your choice. Enjoy!!
