Mango Phirni

             

As we all know Eid is just around the corner so something special dedicated to Eid has to be there on the blog. What's better than celebrating a special occasion with a dessert. I have already shared many dessert recipes on the blog. You may check them out here (click here).

Phirni or Firni is a kind of rice pudding which is very popular in North Indian and Mughlai cuisine. This pudding is also prepared during the holy month of Ramzan and to celebrate festivals like Holi, Diwali etc.....


It's a very easy and quick dessert which needs very few ingredients. It's very similar to Rice Kheer but the difference lies in the kind of rice being used. Phirni is prepared from ground rice while the later is prepared from whole rice. 



So, let's celebrate this Eid with your friends, family members and Mango Phirni. 




Ingredients:

1. Milk: 1 litre
2. Basmati Rice: 1/4 cup
3. Sugar: 1 cup
4. Mango Pulp: 1 1/2 cup
5. Green Cardamoms: 5-6
6. Dry fruits (Cashews, Raisins, Almonds)
7. Rose petals
8. Kesar (optional)




Method:

1. Wash and soak the basmati rice in water for half an hour.

2. Drain the water from the rice and let them dry on a piece of cloth or paper towel for 30-40 mins. 

3. Once the rice dries up transfer it to the grinder and grind them until you get a coarse powder.

4. Place a pan on medium heat and boil the milk until it gets reduced to half of its volume. 

5. Add ground rice to the milk and stir it continuously to avoid lumps. Let it cook for 5-6 mins on low heat.

6. Keep on stirring so that it doesn't stick to the bottom. Check whether the rice is cooked or not.

7. Add sugar, dry fruits and crushed cardamoms. Mix well until the sugar gets dissolved completely and it forms a nice creamy texture and no lumps are left. Turn off the heat.  

8. Let the phirni cool down at room temp. Now we’ll add mango pulp into the phirni.

9. Check out the sweetness of the mango phirni and add more mango pulp if required.

10. Take serving bowls and pour the mango phirni into them. Cover the bowls with aluminum foil or with lids and keep them in the refrigerator for 2-3 hrs.

11. Before serving take the bowls out of the refrigerator and remove the aluminum foil.

12. Garnish the mango phirni with some chopped almonds, kesar and rose petals.
