Mini Cheesecakes (Cheesecakes with Strawberry)

             

Cheesecakes.......We all love Cheesecakes, isn’t it? We always enjoy the soft, creamy and melt in mouth texture of the Cheesecakes. But at the same time they add lot of calories to our body; this is the reason why many of us can't enjoy or even have a guilt factor back in our mind which restricts us from enjoying these beauties. 


So, I decided to cheat these Cheesecakes by removing "Cheese" from it. Yes, you heard it right: "A Cheesecake Without Cream Cheese". It not only helps you to get rid of that "guilt" but it does full justice to the taste of an original Cheesecake.

Ingredients:

1. Strawberry Puree: 1 cup
2. Heavy Whipping Cream: 1 cup
3. Fat Free Yogurt: 1 cup
4. Powdered Sugar to taste
5. Unflavored Gelatin: 2 packets
6. Digestive/ Marie Biscuits: 8-10 
7. Unsalted Butter(melted): 1/2 cup
8. Vanilla Extract: 1/4 tsp

Method:

1. Using a blender grind the biscuits into fine crumbs. 

2. Take the biscuit crumbs in a separate bowl and add the melted butter. Mix it well. 

3.Line the Muffin Tray with liners.

4. Now add a layer of biscuit mixture. Press well and place them in the refrigerator for 15 mins.

5. Meanwhile take heavy cream and beat it until you get soft peaks. 

6. In another bowl take the yogurt and mix it well until smooth and creamy. At this point add sugar and vanilla extract. Mix it again for a minute.

7. Add the cream into this yogurt mixture very gently.

8. Dissolve the gelatin in warm water as per the instructions on the packet. Mix well until it gets dissolved.

9. Strain the gelatin mixture through a strainer and mix it with the yogurt mixture until everything is well combined. 

10. Pour this mixture into the prepared pan. Let it set for 3-4 hours in refrigerator. 

11. In a separate bowl dissolve the gelatin in warm water as per the instructions on the packet. Mix well until it gets dissolved.

12. Mix this gelatin mixture with the strawberry puree.

13. Pour this mixture into the prepared pan and let it refrigerate for another 3-4 hours.

14. Remove the cheesecakes from the liners and garnish it the way you like. 

15. Enjoy these skinny mini cheesecakes without any guilt.
