Hello my Foodie Friends.......hope you all are doing great. We ladies have one universal problem WHAT TO PACK FOR LUNCHBOX? Whether we're making lunchbox for our husbands or for our kids every morning we face the same issue.
Whether we ladies are working or non-working our mornings are usually very busy. So, if we do some meal planning a night before that can help us in making our mornings a bit smooth. Moreover, making our kids eat vegetables is a very tedious task. We are always in search of new and different ideas of how to hide veggies in their meal so they don't understand and can eat some vegetables.
So, today in this video we'll make Veg Mayonnaise Sandwich which is loaded with veggies and every kid's favorite Mayonnaise. This recipe is very easy to make and just needs 10 mins of your time if you do the prep work beforehand.
Ingredients:
1. Bread Slices: 4-6
2. Carrot (finely chopped): 1/2 cup
3. Onion (finely chopped): 1/2 cup
4. Cucumber (finely chopped): 1/2 cup
5. Boiled Potatoes (medium size): 2
6. Tomato Ketchup: 2 tbsp
7. Veg Mayonnaise: 2 tbsp
8. Black Pepper Powder: to taste
9. Salt: to taste
Method:
1. In a bowl grate the boiled potatoes with the help of a grater. Doing so will give a very nice texture to our stuffing.
2. In a separate bowl add the grated potatoes, carrot, cucumber, onion, ketchup, mayonnaise, salt and black pepper powder.
3. Mix everything well to make a smooth stuffing.
4. Take a bread slice and add generous amount of stuffing in it. Now take another bread slice and place it on top of the other one.
5. Take some butter and coat one side of the sandwich with it.
6. Place a pan on medium heat and toast the sandwich on it. Remember to put the butter side down.
7. Press the sandwich with a spatula so that it gets crisp and golden. Toast the sandwich on medium heat for about 2 mins on each side or until you see a nice golden color.
8. Flip the sandwich once it is toasted from one side. Add another tsp of butter and toast the sandwich from this side too so that it gets evenly colored. Here I have used 3 tsp of butter in total.
9. Once the sandwich is done take them out on a plate.
10. Our Veg Mayo Sandwich is now ready we’ll now take a knife and cut the sandwich diagonally.
