Lauki Kofta Curry

           

Hello my foodie friends.......today's recipe is all about one of the most healthiest but neglected vegetables from our Indian household and i.e. Lauki or Bottle Gourd. I'm not blaming anybody I myself don't like Lauki that much so I think of new ways to include this healthy vegetable in our diet.



In order to include Lauki (Bottle Gourd) in our diet my Mom used to make Lauki Kofta Curry and I would eat the Koftas even before they went into the Curry. I love this simple Kofta curry recipe although the fritters are deep fried but still I have the satisfaction of including Lauki in my and my family's diet.



Although I'm thinking of buying Appam pan in which we can prepare koftas using few tablespoon of oil until then we have to compromise. 



One of the most important steps in making any koftas is that the water content should be zero. Whether you're making koftas out of chicken, mutton or with any vegetable, water should be removed as much as possible otherwise the Koftas will be ruined.



So, without doing any further ado let's see how to make Lauki Kofta Curry: 


Ingredients:

For making Koftas:

1. Lauki (medium size): 1
2. Onions (finely chopped): 1
3. Coriander Leaves: 1 tbsp
4. Ginger Garlic Paste: 1 tbsp
5. Coriander Powder: 1/2 tsp
6. Cumin Powder: 1/2 tsp
7. Red Chili Powder: 1/2 tsp
8. Turmeric Powder: 1/2 tsp
9. Besan/ Gram Flour: 4-5 tbsp
10. Oil for frying
11. Salt to taste



For making the gravy:

1. Cumin Seeds: 1 tsp
2. Onion Puree (medium size): 2-3
3. Tomato Puree (medium size): 3
4. Ginger Garlic Paste: 1 tbsp
5. Coriander Powder: 1 tsp
6. Cumin Powder: 1 tsp
7. Red Chili Powder: 1/2 tsp
8. Turmeric Powder: 1 tsp
9. Garam Masala Powder: 1tsp
10. Kasuri Methi: 1 tbsp
11. Green Chilies: 2-3
12. Oil for cooking
13. Salt to taste



Method:

1. Wash and peel off the skin of the Lauki.

2. Grate the Lauki using a grater.

3. Remove water from the grated Lauki by pressing it in between your palms.

4. Add chopped onions, chopped coriander leaves, ginger-garlic paste, coriander powder, cumin powder, red chili powder, turmeric powder and besan.

5. Add besan one tablespoon at a time. There is no need to add water.

6. Just before frying the koftas add water otherwise the batter will release water.

7. Make small balls from the Lauki mixture add deep fry them in hot oil. Fry the kofta until golden brown from all the sides.

8. Once done from one side flip them and let them cook. This may take about 5-6 mins on medium heat.

9. Take some oil in another pan and add jeera in it. Let them crackle. 

10. Now add onion puree and let it cook for 2 mins.

11. Add the ginger-garlic paste and cook the masala until the raw flavor of the ginger-garlic paste is gone.

12. Add the tomato puree and cook the mixture until the oil is separated.

13. Add salt, coriander powder, turmeric powder, cumin powder, red chili powder and mix everything well.

14. Now add Kasuri Methi. This will enhance the flavor of our Lauki Kofta Curry.

15. Add water as per your requirement and let the gravy simmer for 2-3 mins on medium heat.

16. Once done add green chilies and Garam Masala powder

17. Finally add the kofta and mix everything well so that the koftas can soak all the flavors from the gravy.

18. Take out the Lauki Kofta Curry in a serving plate and garnish it with chopped coriander leaves. Enjoy!!
