Pav Bhaji

             

Hello Peeps.....hope you all are doing good and enjoying this monsoon in your respective regions. For us monsoon is yet to come in full swing. 

Being a food blogger and video creator, I relate everything to food. There are some food items which we really enjoy during the monsoon time. If you're a big foodie like me then I guess you can relate what I am referring to. Anyway, what is the one food item that you really enjoy during the monsoon time? For us it is Pakoras (fritters) and Elaichi wali Chai (cardamom flavored Tea).



Coming on to today's post which is a Pav Bhaji; a Pav is nothing but a Dinner Roll toasted with butter and Bhaji is a mixture of numerous vegetables, spices and butter blended together to form a very healthy dish. 



Pav Bhaji can be a very healthy dish if you make it in a healthier manner. Since it has number of veggies you may serve it to your child and they would love it big time. You may add any vegetable of your choice but generally Potatoes, Capsicum, Carrots, Green Beans and Cauliflower are used to make Pav Bhaji. 




Here, I have used combination of Butter and Oil but you can use any one of it or both as per your requirement. So, without doing any further ado let's begin with the recipe:




Ingredients:

For the Bhaji:

1. Potatoes (medium size): 5-6
2. Onions (large size): 2
3. Green Capsicum (large size): 1
4. Carrots (medium size): 1
5. Green Beans: 15-20
6. Tomatoes (medium size): 4
7. Cauliflower: 1 cup
8. Garlic Paste: 2 tbsp
9. Kasuri Methi: 2 tbsp
10. Red Chili Powder: 1 tsp
11. Cumin Powder: 1 tsp
12. Turmeric Powder: 1/2 tsp
13. Coriander Powder: 1 tsp
14. Aamchur Powder: 1 tsp
15. Salt to taste
16. Oil/ Butter: as required

For Pav:

1. Pav/Dinner Rolls: 6-8
2. Butter: as required



Method:

1. Wash and boil the potatoes. Peel off the skinn of the potatoes.

2. Heat a pan on medium heat and add butter. Here I’m using butter and oil both. If you want you can use only butter the choice is yours.

3. Once the butter is melted add finely chopped onions and fry them until it becomes soft. 

4. Add the garlic paste and fry it until the raw smell of the garlic is gone. 

5. We’ll now start adding our veggies firstly add the cauliflower because it takes more time to cook.

6. Next add the finely chopped carrots and cook it until it becomes soft.

7. Now add the chopped beans and capsicum. Basically the concept is the veggies which takes more time to cook should be added first.

8. Once all the veggies becomes soft add finely chopped tomatoes and cook them until the tomatoes gets soft.

9. Now add the mashed potatoes and mix everything well and cook them for 7-8 mins. It’s better to use a potato masher to mash the Bhaji. This will ensure everything is evenly mashed and will give a smooth texture to our Bhaji.

10. We’ll now add the powdered spices like salt, red chili powder, turmeric powder, cumin powder, coriander powder and aamchur powder. Now give a nice mix so that everything is well incorporated. 

11. Once done add water as per your requirement, the consistency of the Bhaji completely depends upon how you like. 

12. Let the Bhaji simmer on low heat for 5-6 mins and then take the potato masher and mash everything one more time.

13. Finally add green chilies and kasuri methi to give the final touch. Here I have used raw veggies rather than boiled. This makes a huge difference in the texture of the Pad Bhaji.

14. Cook the Bhaji on medium heat for 5 more minutes with lid covered.

15. Now we’ll work on our Pav for that take some butter in a pan and let it melt then add the Pav. Make a cut in the center of the Pav and toast it. 

16. Flip the Pav and again add some butter toast it from another side. Once done take them out on a plate.

17. Our Pav Bhaji is now ready. Place the Pav on the plate and garnish the Bhaji with some butter and chopped coriander leaves. Don’t forget to serve chopped onions and lemon. It is one of the imp element of Pav Bhaji.
