For me it's: A hot cup of piping Ginger Tea and some crispy Pakoras. I can see myself sitting in the balcony and munching on the Pakoras. Sometimes me time is necessary to get rejuvenated and bounce back with a new level of energy.

Hariyali Chicken Kababs are made by marinating the Chicken in a green marinate and then cooking it to perfection. That green marinate will do all the magic.
So without doing any further ado let's begin with the recipe:

1. Chicken: 500 gms
2. Coriander Leaves: 1 bunch
3. Mint Leaves: 1 bunch
4. Green Chilies: 3-4
5. Lemon: half a lemon
6. Hung Curd: 1/2 cup
7. Turmeric Powder: 1/2 tsp
8. Coriander Powder: 1/2 tsp
9. Cumin Powder: 1/2 tsp
10. Red Chili Powder: 1/2 tsp
11. Garam Masala Powder: 1 tsp
12. Ginger-Garlic Paste: 1tbsp
13. Fresh Cream: 1/4 cup
14. Kasuri Methi: 1 tbsp
15. Oil: 2 tbsp
16. Salt to taste
Method:
1. Wash the chicken pieces and pat dry them with a kitchen towel.
2. In a blender add in the coriander leaves, mint leaves and green chilies and blend them into a smooth paste.
3. Take out the paste in a mixing bowl and add the hung curd, coriander powder, cumin powder, red chili powder, turmeric powder, garam masala powder, ginger-garlic paste, salt, fresh cream and kasuri methi. Mix everything well until well combined.
4. Add the oil and lemon juice to the chicken. Mix well and allow the chicken rest for at least 8 hrs.
6. Line a baking tray with aluminium foil and brush some oil on it. Place the chicken skewers on the baking tray.
7. Preheat the oven at 450 F (250 C). When the oven is ready place the baking tray in the pre-heated oven it cook it for 15 mins. Now, take out the chicken pieces and coat it with oil and flip them so that it cooks evenly from both sides.
8. Our Hariyali Chicken Kabab's are now ready.
