Hello, my Foodie Friends...... I hope you all are doing fine and spending the lockdown period cooking and relaxing with your family members. During this lockdown phase, I have developed a habit of baking at least thrice a week. Though I love baking but not this time of the year when baking makes you sweat.
As of now, you all might know I have a 3-year-old son. He loves to help me in the kitchen. So last week we decided to bake some Banana Walnut Muffins as he loves home-baked cakes and muffins. Luckily here in Kolkata, the weather is too good these days.
These Banana Walnut Muffins taste too yumm and can be made in a jiffy. Whenever I have some overripe Bananas this is the way I use them. So, without any further ado, let's begin with the recipe:
Ingredients:
1. All-purpose flour: 3/4 cup
2. Oil: 3/4 cup
3. Sugar: 3/4 cup
4. Baking Powder: 1/2 tbsp
5. Vanilla Extract: 1 tbsp
6. Milk: 2 tbsp
7. Salt: a pinch
8. Eggs: 2
Method:
1. Bring all the ingredients to room temperature.
2. Preheat the microwave oven to 180 C.
3. In a bowl add all-purpose flour, baking powder, and salt. Keep it aside.
5. Take oil and powdered sugar in another bowl and beat well until it becomes creamy.
6. Now we will add the eggs one by one and beat it nicely with the sugar and oil mixture.
7. Add half of the flour mixture and gently mix everything using a cut and fold process.
8. Add the remaining flour mixture and using the same cut and fold process mix the flour into the cake batter.
10. Coat the chopped walnuts with a tsp of all-purpose flour. Add the dry walnuts in the prepared batter and mix them well.
11. Fill the muffin molds with the prepared batter. Once done place them in the preheated microwave oven. Cook them at 180-degree celsius for 25-30 mins.
12. Once done insert a toothpick or a skewer to check whether the muffins are done or not. If not cook them for another 2-3 mins. Let them stay in the microwave for another 5 mins.
13. Take out the banana-walnut muffins from the microwave and let it cool down completely.
