Matka Kulfi with just 2 Ingredients


Hello, Foodies hope you all are doing fine and staying home following the lockdown guidelines. We all know the ongoing situation around the world. Watching the news channels,  reading the news over phones and forwarded messages sometimes make us depressed. So, it's always better to do something which makes you happy and you feel relaxed.

If you ask me cooking and baking makes me more than happy and I forget all my tension and worries. Cooking for our family and most importantly their favorite dishes gives immense pleasure and what's better than enjoying it when every member of your family is together. 



I would like to suggest all my viewers rather than panicking and getting frustrated involve yourself in something which makes you and your inner soul happy. It can be anything starting from cooking, reading, dancing, singing, painting, listening to music or any other hobby which has taken a side stand or you were unable to do due to your busy lifestyle.


Today in this video I'll be sharing the recipe of Matka Kulfi. I have already shared the recipe of Mango Kulfi (click here). But this Kulfi recipe is very special. I have made this Kulfi with only 2 ingredients. Yes, you heard it right KULFI WITH JUST 2 INGREDIENTS. Adding chopped cashew nuts, pistachios, almonds, and cardamom powder is completely optional. You can still make this Matka Kulfi with just Milk and Sugar and enjoy it with your family amid this lockdown situation.

So, without any further ado let's begin with the recipe:





Ingredients:

1. Milk: 1.5 liters
2. Sugar: 1/2 cup
3. Chopped Pistachios (optional)
4. Chopped Cashew Nuts (optional)
5. Chopped Almonds (optional)
6. Cardamom Powder (optional): 1 tsp

Method:

1. Place a pan on medium heat and add 1/4 cup of water. Doing this will prevent the milk from sticking to the bottom of the pan.

2. Add milk in the pan and boil it until it reduces to 1/3 rd. This will take somewhere around 15-20 minutes on medium heat.

3.  Once the milk is reduced add sugar and again boil it for 5 minutes.

4. Now add the cardamom powder. Scrape the sides of the pan because it’s that solidified milk which increases the texture and taste of the kulfi

5. Add the chopped cashew nuts, chopped almonds, and chopped pistachios. Reserve some dry fruits for garnishing.

6. Once the milk is reduced enough to switch off the flame. 

7. Our kulfi mixture should have a consistency that it should stick to the bottom of the ladle.

8. Allow the kulfi mixture to cool down at room temp.

9. Take a wire whisk and whisk the kulfi mixture. Doing this will give remove the lumps and give a smooth texture to our kulfi.

10. Take a Matka or kulhar and fill them with the kulfi mixture.

11. Garnish the Kulfi with chopped almonds and pistachios. 

12. Now take an aluminum foil and cover the matkas with it. Keep the matkas in the freezer for 8-10 hrs and resist yourself from checking the kulfis every hour.

13. Uncover the Kulfis and enjoy rich and creamy Matka Kulfi and that too made with just 2 ingredients. 

P.S: ADDING DRY FRUITS AND CARDAMOM POWDER IN THE KULFI IS COMPLETELY OPTIONAL. YOU CAN MAKE THESE MATKA KULFIS WITH ONLY MILK & SUGAR.
