Swiss Roll with Vanilla Cream Frosting

Sorry for the late post guys....This post was pending in my drafts folder for a very long time but due to some or the other reason I was not able to post this recipe.

It's almost 3 months that Valentine's day has passed by but I strongly feel that love doesn't need any date and time to be expressed. You can always show your love for your loved ones by gifting them expensive and luxury items but what we do on day-to-day basis for our loved ones matters the most.

Love doesn't need any special occasion to be expressed. If you love somebody you can express it in number of ways. I strongly believe that Food is one thing which is the best  way to express your love and care for your loved ones. Treating your family members by making a sumptuous meal is an excellent way to express your TLC for someone.

So, to embark this festival of Love I thought of making Swiss Roll filled with vanilla cream frosting for my family. Swiss Roll also known as Jelly roll which is a sponge cake layered with jelly or cream, rolled up and served in cross sectional slices. It tastes delicious and divine.

Even if you don't get the swirls perfect or your cake gets cracked while rolling it's okay. You will still love the tasty and heavenly Swiss Roll.

Ingredients:

Heart Shape Decoration:

1. Egg White: 1
2. Sugar: 1/2 tbsp
3. Flour: 3 1/2 tbsp
4. Butter: 2 tbsp
5. Red Food Color: 1/8 tsp

Sponge Cake:

1. All purpose Flour (Maida): 1 cup
2. Corn Flour: 2 tbsp
3. Cocoa Powder: 1 tbsp
4. Sugar: 1/2 cup
5. Eggs: 4
6. Baking Powder: 1/4 tsp
7. Vanilla extract: 1 tbsp
8. Butter for greasing the pan
9. Salt a pinch
10. Red Food Color: as you need

Method:

1. Grease the baking tray with butter.

2. Line the baking tray with a parchment paper and again grease the parchment paper with butter.

3. Take a bowl and crack the egg. Separate the egg white from the yolk because we only need the egg white.

4. In another bowl add in the butter and sugar and then beat it nicely until they turn creamy. Scrape down the sides of the bowl nicely.

5. Add the egg white into the butter-sugar mixture and again beat them together until they turn smooth and creamy.

6. Add red gel food color into this mixture. Mix well.

7. Add flour (mentioned in the heart shape decoration section) into this mixture and blend it nicely.

8. Fill this mixture in a piping bag and draw heart shape designs onto the baking tray. Keep the tray into the refrigerator for 10-15 minutes until they sets completely.

9. Sift together all purpose flour, corn flour, cocoa powder, baking powder and a pinch of salt.

10. In a mixing bowl crack in all the eggs and beat them until they turn frothy. At this point add in the sugar and again beat it for 2 mins.

11. Add in the vanilla extract and the red food color. Add the dry ingredients and mix nicely. Scrape down all the sides nicely we don’t want to waste our batter.

12. Pour the batter very gently on the prepared baking tray. Fill in the nooks and corners of the tray with the help of a spatula.

13. Pat the baking tray few times so that the air bubble gets removed. Bake the coke in a preheated oven for 10 minutes at 180 degree C or 350 degree F.

14. Take out the cake from the pan by placing a sheet of parchment paper and a chopping board on top of it and then flip it gently.

15. Remove the parchment paper slowly. We’ll now roll our cake by keeping the heart shape side on the top and allow the cake to cool down.

16. Unroll the cake very gently. Spread a thick layer of whipped cream.

17. Start rolling the cake once again. Remove the extra cream.

18. When you’re ready to serve cut cross sectional slices of the cake.

19. Enjoy!!
